Lemon creme (vegan)
Preparation in 20 minutes
Ingredients
120g vegan ricotta (e.g. the plain variety by New Roots)
Grated zest of 1 lemon
1 tsp lemon juice
35g sugar
100g plant-based cream
Fresh mint to decorate
1 box Kambly bio&vegan Lemon Leaves
Preparation: 20 minutes
Chill time: approx. 4 hrs
Preparation

Mix the plant-based cream with the sugar, lemon zest and lemon juice and beat until stiff.

Whip the vegan ricotta until creamy and fold in the lemon cream.

Divide the creme into small glasses or bowls and refrigerate for a few hours.

Before serving, crumble the Lemon Leaves biscuits and spread over the creme.
