White chocolate and almond mousse with Sablés

Preparation in 15 minutes

Ingredients

Ingredients (serves 4):

100g white chocolate with almonds

50g white almond mousse

150ml double cream

2 egg whites

1-2 drops bitter almond flavouring or ½  tbsp Amaretto

1 pack (90g) Kambly Sablés with almonds and PureSpelt

Preparation 

  1. Heat the almond mousse, chocolate, bitter almond flavouring and cream gently in a saucepan until the chocolate melts.
  2. Allow the chocolate mixture to cool.
  3. Beat the egg whites until they form stiff peaks and carefully fold into the cooled chocolate mixture.
  4. Crush the Sablés in a food processor or with a rolling pin in a plastic bag.
  5. Divide the Sablé crumble between 4 glasses and spoon the mousse on top.
  6. Cover and chill in the refrigerator for at least 4 hours, preferably overnight.
  7. Serve with whipped cream and almond flakes.
