Chocolate Cheesecake Bites (vegan)

Preparation in 45 minutes

Ingredients

Base
18 Petit Coeur biscuits* (biscuit part)
30g vegan butter

 

Filling
18 Petit Coeur biscuits* (chocolate part)
300g vegan yoghurt (e.g. soya-based)
20g chocolate instant pudding mix
1 tbsp cocoa powder

 

*1 box of Kambly Petit Coeur contains 12 biscuits.

 

Preparation: 45 minutes
Chill time: approx. 4 hrs

Preparation 

  1. Preheat the oven to 180°C (top and bottom heat). Separate 18 Petit Coeur biscuits into the biscuit and chocolate parts.
  2. Place the biscuit parts in a freezer bag and crumble with a rolling pin until they have a sandy consistency.
  3. Melt the vegan butter and mix with the crumbled biscuits in a bowl until you have an even mixture.
  4. Distribute the mixture evenly between 6 muffin moulds and press down with a spoon to create an even base.
  5. Chill the moulds in the fridge while preparing the filling.
  6. In a bowl, stir the vegan yoghurt, chocolate instant pudding mix, sugar and cocoa powder together thoroughly until smooth.
  7. In a bowl over a pan of simmering water, gently melt the chocolate parts of the Petit Coeur biscuits, then stir into the yoghurt mixture until the chocolate is evenly mixed.
  8. Spoon the filling evenly onto the prepared bases in the muffin moulds.
  9. Bake the bites in a preheated oven for 20–25 minutes until the filling is just firm and the surface looks dry. The bites may still wobble slightly in the middle, but will become firmer when cooled.
  10. Leave the cheesecake bites to cool completely. Decorate them however you like with the remaining Petit Coeur biscuits.
